Perceptions and Behaviors of Legume Consumption among Puerto Rican Adults

Objectives: The objective of this study was to assess intake, perceptions, and dietary behaviors of legume consumption in Puerto Ricans. Methods: We used interviewer-administered surveys to collect data from 70 adults in San Juan, Puerto Rico. Results: Most participants reported positive perceptions regarding taste, nutritional value, health effects, traditional aspect, and availability. Taste and nutrition were the main reasons for consumption. Participants consuming legumes >4 times/week had more positive opinions and reasons for consumption (p < .05). Consuming more legume varieties was associated with increased serving size (≥1/2 cup) and incorporating more legumes relative to other foods in a meal (p < .05). Conclusions: Increasing variety of legumes and strengthening positive perceptions and reasons for consumption may lead to higher legume intake among Puerto Ricans.
